EARTH DAY RECIPES: EAT GREENnWhat better way to celebrate Earth Day than to eat environmentally friendly, healthy and green!nnOur Lady of Weight Loss's Earth Day recipes feature seasonal fruit, veggies and heaps of good energy! Not your usual salads! These ARE exciting! Woo Hoo!nnSalacious Strawberry & Fabulous Feta SaladnnIngredients:n1 cup slivered almondsn2 cloves garlic, mincedn1 teaspoon honeyn1 teaspoon Dijon mustardn1/4 cup fig balsamic vinegarn1 head romaine lettuce, tornn1 pint fresh strawberries, slicedn1/2 cup crumbled feta cheesennInstructions:nIn a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. Remove from heat, and set aside.nIn a bowl, whisk together the garlic, honey, Dijon mustard, and fig balsamic vinegar.nAnd now, in a large bowl, toss together the toasted almonds, romaine lettuce, strawberries, and feta cheese.nDrizzle dressing over the salad and toss!nnOur Lady of Weight Loss finds that there's no need for oil dressings when cheese is a part of the recipe. Try it! You'll like it!nnnBeatific Baby Spinach and Apple SaladnnIngredients:n2 (6 ounce) packages fresh baby spinachn1 medium sweet apple, choppedn1/3 cup raisinsn3 tablespoons chopped peanuts, raw (not salted or roasted)n1 tablespoon extra virgin olive oiln2 tablespoons balsamic vinegarn1 tablespoon mango chutneyn3/4 teaspoon curry powdernsprinkle of saltnnInstructions:nIn a large bowl, combine the spinach, apple, raisins and peanuts.nThen, simply, combine the remaining ingredients in a tight-fitting jar. Shake it up, baby! Drizzle over salad and toss.nnnBest EVER Fruit SaladnnIngredients:n2 medium sweet apples, choppedn2 nectarines, pitted and choppedn2 plums, pitted and choppedn1/3 cup raisinsn1 cup green grapes, no pits please!n1 container of raspberries (organic frozen if you can't find fresh)njuice of 1 fresh lemonndrizzle honey (not so much)nnInstructions:nIn medium sized bowl mix together all the fruit.nThen the juice of the one lemon and the drizzle of honey.nToss.nnEnjoy!!!
