Most of the parents do not provide salads to kids assuming the kids would not prefer them. It is true that kids hate vegetables but if you can chop them up in fascinating shapes and add a couple simple ingredients to make them spicy, the kids would gobble them up in absolutely no time.

  1. Summer Salad-This recipe is incredibly healthy as it has abundant antioxidants. Grate carrots in a container and add finely chopped radishes, onions, and courgettes into them. Add a few mint leaves because they can enhance the flavor to a great extent. Give everything a good mix.

Whisk mustard paste, vinegar, oil, and mayonnaise in a separate container. Add a pinch black pepper and salt as per taste. Pour this dressing into the salad and mix thoroughly before serving.

  1. Cucumber Salad- This recipe is fresh, light, and perfect for the kids. Peel the cucumber and cut it in half. You can leave out the seeds or scoop them depending on your child's age. Chop the cucumber into tiny pieces. You can add thinly chopped red cabbage and red onion for crunchiness and colour. Toss the salad and serve chilled.

  1. Summer Potato Salad- Boil the potatoes with a little salt. Drain the water and let them cool down. Whisk mayonnaise, buttermilk, vinegar, mustard paste and sugar in a container. Add the potatoes along with poppy seeds and radishes and mix well. Spread mustard cress before serving.

  1. Sweet Potato Salad- Peel the sweet potatoes and cut into medium pieces. Add one tablespoon of olive oil and a little seasoning. Now roast it inside the oven for at least thirty minutes or until they have turned golden and tender. Let the potatoes cool down. In a separate container, whisk extra virgin olive oil, sherry vinegar, and honey.

Mix the sweet potatoes and the dressing thoroughly and add chopped spring onions and red onions. Make sure to not break up the potatoes. You can use your hands for the mixing.

  1. Fruit Salad- Kids love crunchy fruit salads and they are quite easy to make. Chop the apples into small pieces and add celery, orange juice, and finely sliced nuts into them. You can use cashew nuts, peanuts, walnuts, almonds, raisins, dates, etc. The more, the better. Add ¼ cup of mayonnaise and few drops of honey and mix well. Put the salad in refrigerator for a couple of hours and serve chill.

Eating raw fruits and vegetables will allow the kids to stay healthy for a long time by strengthening their immune system. The best way to incorporate fruits and vegetables into diet is through salads. They will become a favorite of your kids soon since they are colourful and presented quite fascinatingly.
