I have a special place in my heart for cheese; from Gouda to Colby, Parmesan or Mozzarella. Cheddar is better, but I would be remiss to leave out Swiss. In my book, if you top something with cheese, you only make it better. It explains why my favorite types of appetizers are cheese based, mainly dips. Here are some cheese dip appetizer recipes I hope you will try. They are perfect for football Sunday, holidays, parties or a late night snack. rnBlue Cheese Dip rnWhat you need: • 8 oz package cream cheesern• 4 oz blue cheesern• 3T milkrn• 1 T prepared mustardrn• 1 t pepper What you do: • Make sure cheese is softened. Add all ingredients into blender. Blend until smooth using blend setting; serve. Spicy Chili Cheese Dip rnWhat you need: • 15 oz can chili without beansrn• 4 oz can green chiles, chopped and seededrn• 1/2 lb sharp cheddar cheese, shreddedrn• 8 oz package cream cheese What you do: • Combine all ingredients in a microwave safe bowl. Microwave 1 minute at a time, stopping to stir contents, then resuming procedure until cheese melts. Easy Breezy Cheesy Bean Dip What you need: • 16 oz can refried beansrn• 8 oz package cream cheesern• 2/3 c onion, choppedrn• 1 c sharp cheddar cheese, shreddedrn• 4 oz can green chiles, diced What you do: • Soften cream cheese and cut into pieces. Add cream cheese, onions, chiles and beans to small crock-pot/slow cooker and mix well. Cook, covered, for 2 - 3 hours on low. Stir in cheese, cover and heat on low until cheese is melted. Serve with tortilla or corn chips. Add a couple shakes of hot sauce into mixture if you like it extra spicy.
