It is amazing how rigid we are when it comes to the subject of food and what we eat. In all other aspects of life virtually anything goes: people walk the streets with pink hair; sail the Atlantic single-handed or jog around the house for two hours every morning and yet if we prefer beans and lentils to beef and chicken we are considered as being rather odd.

Vegetarians are not cranks, and there is nothing weird and wonderful about a pattern of vegetarian eating; they just prefer to eat dishes which do not contain meat, poultry, game and, quite often, fish. “Why don’t they become ill?” you hear people say; “Where do they get their energy from if they don’t eat meat?”; “How boring to live on just vegetables and those little dried peas!” As vegetarians will happily tell you, they feel perfectly healthy, have quite sufficient energy to cope with day-to-day activities and, above all, they really enjoy their food.

A vegetarian diet can be just as varied and interesting as one based on meat and fish. Meat is much the same the world over, which cannot be said of the wide and wonderful range of fresh fruits and vegetables. And it is variety which is very much the keynote of vegetarian eating: different pastas, rice, cheeses, nuts and pulses are just a selection of the varied ingredients of a vegetarian diet. Most important of all, vegetarian dishes are every bit as nutritious as their meat-rich counterparts. The main difference lies with the types of food which provide us with the necessary nutrients. In a typical vegetarian dish, the protein usually comes from pulses, nuts or cheese, or a combination of these ingredients. Minerals, vitamins, fats and carbohydrates come from all the other basic foods, such as those already mentioned.

Eating the vegetarian way has all sorts of advantages in its favor. A meatless de is a very healthy one since it is nutritious, low in fat and high in bulk and fiber. Vegetarians rarely need to wants their weight as a diet that is high in natural fibers and low in fat is comparatively low in calories. The traditional pattern of Western eating is relatively expensive to follow, whereas vegetarian dishes are more economical to prepare and cook. In fact, meatless meals can simply make a nice change from the traditional pattern of eating. Vegetarian cooking is fun, and eating vegetarian meals is healthy and good for you.

Vegetarian food really can be exciting and delicious and even if you are not a committed vegetarian many vegetarian recipes are well worth trying. The dishes combine unusual tastes and textures with an imaginative use of spices and fresh herbs for extra flavor. If you served many of the recipes to your family and friends they probably wouldn’t even realize that their meal was meatless.
