Rhubarb has been around for thousands of years in China and 400 years ago it was first used in the UK, and it has lots of wonderful health benefits. Where it Grows - Rhubarb grows in the US, Europe, Asia, Arabia, China, Japan, Russia, and anywhere that has a moderate climate. And it will even grow in tropical areas.
Other Names - Also called Rheum rhabarbarum and it’s part of the Polygonaceae family.
Parts Used - The red stakes are used. The green leaves are poisonous.
Freezing - The red stakes can be cut into pieces and place in a plastic bag and remove the air and it will keep for a very long time in the freezer.
Taste - The taste is kind of like a tart green apple and many people add sweeteners to it to make it even more delectable. Strawberry Rhubarb pie is wonderful.
Stalks can be Cooked or Eaten Raw - The stalks are great if cut up and cooked and used in jams, jellies, pies, cobblers, and other desserts. And the raw stalks can be cut up and dipped in honey and they are really tasty. The stalks can also be used in savory dishes such as soups, stews, and other spicy recipes.
Making Rhubarb Tea - Cut up the raw stalks and place them in a cup and add boiling water and steep for 15 minutes and drink… Wonderful!
