Soups are very versatile and can be consumed at any time of the day. In fact, they can be made using almost every vegetable and are healthy, wholesome and nutritious. Which is why soups make an excellent meal especially for the elderly. Here are 4 soup recipes to serve for your next meal.
#1. Vegetable soupr
You can enjoy this soup or go one step ahead and remove the vegetables using a strainer to make homemade vegetable stock and add it to other soups to make them flavourful.
You’ll need:
¼ cup carrot, roughly choppedrn¼ cup cabbage, chopped
2 tbsp celery, roughly choppedrn¼ cup onions, choppedrn!/4 cup cauliflower florets
Directions:
Boil 3 cups of water in a non-stick pan. Toss in the celery, carrots, cabbage, onions and cauliflower. Bring to a boil and continue to cook over high flame for 10 minutes.
Serve immediately.
#2. Carrot soupr

A, this soup will cleanse your body in an instant!
You’ll need:
Salt, to tastern¾ cup milk
1 tbsp yellow daal, washed and drainedrn½ cup onions, chopped
2 cups carrots, chopped
Directions:
In a pressure cooker, add ¼ cup of water along with the daal, onion and carrots. Cook until 2 whistles, remove the lid to allow the mix to cool.
Once cool, use a mixer to blend the mix to a smooth puree.
Add the puree to a pan along with milk, pepper, salt and half a cup of water. Cook over medium flame for 2-3 minutes. Serve immediately.
#3. Spinach Soupr
Nutrient-rich and aromatic, this easy soup is sure to delight everyone.
You’ll need:
Salt, to taste
1 cup milkrn½ cup onions, chopped
1 tsp garlic, grated
1 tsp olive oil
3 cups spinach, washed, drained and shredded
Directions:
Heat oil in a non-stick pan. Saute the onions and garlic for a minute over medium flame.
Toss in the spinach and saute for 2 minutes over medium flame.
Stir in 1 ½ cups of water and bring to a boil.
Reduce the heat and remove from fire once the soup becomes to thicken. Cool a little and blend using a mixer until smooth.
Add the pan back to fire after adding pepper, salt and milk. Stir and serve hot.
#4. Cauliflower Soupr
Not only is this soup very easy to make, but it’s packed with calcium and protein.
You’ll need:
Black pepper and salt, to taste
2 tbsp celery, finely chopped
2 cups of milk
1 cup onions, finely chopped
1 tsp oil
2 cups cauliflower, roughly chopped
Directions:
Heat oil in a pan and saute the onions until they turn translucent. Toss in the cauliflower and saute for 3-4 minutes on medium flame.
Stir in the milk along with ½ cup of water. Continue to cook for 8-10 minutes over medium flame. Let the mix cool before blending it into a smooth paste.
Heat the soup again and add ½ cup of water, pepper, salt and celery. Cook over medium flame for 2 minutes before serving.
