The decadent chocolate raspberry cheesecake recipe can be as easy as this to follow. You’ll need a cup of 20 chocolate wafer cookies, 2 tablespoons of butter, 1.5 cups of sugar, 2 packages of softened cream cheese, 2 packages of softened reduced-fat cream cheese, 2/3 cups of unsweetened cocoa powder, 4 big eggs, 1 teaspoon of vanilla extract, 6 ounces or 1/3 cups of divided raspberries and 2 ounces of bar semi-sweet chocolate.
Now pre-heat the oven to 350 degrees Fahrenheit. Crush cookie wafers and take 1 cup of fine crumbs. Stir the crumbs in butter in a medium bowl. Bake the mixture for 5 minutes after pressing it on a spring-form pan of 9 inches. Let it cool.
Reduce the oven temperature to 325 degrees Fahrenheit now. Beat the cream cheese with an electric mixer in a big bowl. Next, beat in vanilla, sugar and cocoa, gradually increasing the speed from low to high to mix thoroughly. Now beat in the eggs, one by one. Scrape the bowl well after each addition. Now stir in 1 cup of raspberries and pour the mixture into a pan. Bake for 60-70 minutes. Leave it for 1 hour in the oven switched off.
