“Crisp Mexican Veggie Filled Potato Balls”

“Full of Protein, Anti-inflammatory Agents, and Antioxidants”

Here is a crisp on the outside and soft on the inside tasty treat that’s super low in fat. And it’s organic and full of lots of great nutrients, anti-inflammatory agents, and full of protein that will do the body good… plus they are very easy to make.

Outer Layer Ingredients:

4 - Cups of Organic Cooked Mashed Potatoes

4 - Cups of Organic Cooked Brown Rice - The rice makes everything stick together and makes it crisp too.

Salt and Pepper to Taste

Take the cooked mashed potatoes and rice and use your hands and mash them together until well incorporated and add the salt and pepper.

Set aside for later use

Filling Ingredients:

1 - Large Organic Yellow Onion - Chopped

8 - Organic Garlic Cloves - Minced

12 - Oz of Organic Plant Protein Crumbled

3 - Cups of Organic Cooked Potatoes - Medium Cubes

20 - Organic Cherry Tomatoes - Halved

3 - Cups of Organic Corn - Removed from the Cob or Frozen will work

2 - Cups of Cooked Organic Black Beans… black beans contain powerful anti-inflammatory agents.

4 - Tablespoons of Organic Annatto Seed Powder - Gives this a rich yellow color

3 - Tablespoons of Organic Garlic Powder

2 - Tablespoons of Organic Cumin Powder

3 - 8 oz Bottles of Organic Mexican Salsa - Either Mild or Medium Hot

Enough Filtered Water to Cover Everything

Salt and Pepper to Taste

Take the garlic and onions and sauté them in a ceramic non-stick frying pan. Next, take everything and add it to a large pan and mix well and add the water and simmer until the water disappears and the potatoes are easily cut with a knife.

Then take the outer layer mixture and place a good handful (I made the balls a little smaller than a tennis ball, but whatever size you want will work) in your hand and flatten it out and then add a heaping teaspoon of filling. And fold over the outer wrapper and seal it completely. Do this over and over again until you use up all the outer wrapper material and filling.

Air Fryer Method - Next, take the filled potato balls and place them in an air fryer and fry at 400 degrees until nice and brown… this usually takes 20 to 30 minutes.

Oven Method - Or take a non-stick cookie sheet and place the balls on it and pop cookie sheet into a preheated 450-degree oven for 20 minutes or until they become nice and brown on the outside.

Remove from the oven or air fryer and allow to cool and then serve… goes well with any kind of organic fat-free salad dressing or dipping sauce that you like.

I have to say that my wife didn’t think this would work out… but it did and she now loves this dish… and she went back for seconds.

This dish is also great for parties… and could be made ahead of time and frozen and browned later.

Health Benefits of Organic Potatoes

And organic potatoes have lots of great healing abilities that most people take for granted. In fact, organic potatoes have a bad rap because they are always surrounded with lots of oil, and are usually deep fried, and then all the cheese and sauces are added which make them deadly. But organic potatoes by themselves are very healthy, and we just need to adjust our cooking methods. And if potatoes are consumed in moderation they can be a wonderful and beneficial food for the body.
Most Americans eat over 120 pounds of potatoes a year. And in other countries such as Germany, they consume about 240 pounds of potatoes a year.

Relatively Low in Calories – An average potato only contains about 110 calories and they are very filling… making them great for any diet.

Eating Organic Potatoes is Important – Regular potatoes contain lots of herbicides and pesticides. In fact, they are high on the list of veggies which contain lots of chemicals… thus organic potatoes are the best way to enjoy this wonderful food.
