Here is a really delicious recipe that you will love. I made this dish for Easter and everyone loved it. I would have to say that lots of people have lots of squash in their garden but don’t have a lot of delicious recipes. Well, here is a recipe that’s super tasty and everyone will love it… and it’s very nutritious. Yellow squash is full of healing nutrients that lower your blood pressure, prevent heart disease and strokes. They are full of lutein and other nutrients that prevent macular degeneration, and lots of great anti-oxidants such as beta-carotene that prevent cancer. Contains Omega 3 oils for cardiovascular health, they are cholesterol free, and they prevent prostate disease, help prevent cancer, and they are a great weight loss food and more. And this recipe is so simple to make… only takes 15 minutes.

Another Whole-Foods Plant-Based Recipe:

Ingredients:

12 - Cups of Organic Yellow Squash - Chopped — it seems like a lot but it all cooks down.

1 - Yellow Organic Onion - Chopped

1 - Red Organic Bell Pepper - Chopped

8 - Cloves of Organic Garlic - Minced

4 - Tablespoons of Organic Honey

1/3 - Cup of Tawny Port

1/3 - Teaspoon of “Now Brand” Stevia Powder - Might be a different amount if you are using another brand.

Enough Filtered Water to Sauté

Take a large skillet and place it on medium heat and add the onion and bell pepper and a little filtered water and brown the onions.

Next, add the squash and keep moving everything with a spoon until the squash starts to brown and become soft. You might have to add more water as you keep moving the mixture of squash, onions, and bell pepper in the pan. Don’t let it burn.

When nice and soft and brown add the honey and keep moving everything in the pan.

Now, add the port and keep moving so it doesn’t burn… you just want to incorporate the port… the alcohol will disappear and the flavor will be left behind.

Shut off the heat and let cool.

Serves 12 People.
