“Dr. Haider’s Anticancer Eggplant Lasagna”
Here is a wonderful recipe that took no time at all to put together. And it’s delicious—REALLY! We cut this lasagna up to take to my mother-in-law and family and I was hoping there was a little left over. This lasagna is full of powerful anticancer agents and antioxidants such as eggplant, spinach, and carrots, and more. This tasty lasagna will do the body good… I Promise.

Another Whole-Foods Plant-Based Recipe
Ingredients:
6 - Small Organic Eggplant - Cut into Cubes with the skin on… the skin contains lots of anticancer agents.
4 - Large Organic Carrots - Shredded
12 - Organic Garlic Cloves - Minced
2 - Tablespoons of Organic Garlic Powder
4 - Tablespoons of Organic Italian Seasoning
2 - Large Yellow Organic Bell Peppers - Sliced Thin
5 - Large Organic Potatoes - Sliced
5 - Cups of Organic Spinach - Finely Chopped
1 - Large Organic Tomato - Chopped
1 - 20 oz Organic Low-Sodium Marinara Sauce
1 - Cup of Organic Shredded Mozzarella Veggie Cheese - Casein Free
Salt and Pepper to Taste
In a 10 by16-inch deep baking dish put down a layer of cubed eggplant, and salt and pepper and add some of the seasonings, and a little bit of the onion and garlic. Then, add a layer of finely cut yellow bell pepper and then a layer of sliced potatoes. And again add some more of the seasoning, garlic, and onion. Then, add another layer of eggplant and again add some more of the seasoning, garlic, and onion. Then, add the sauce and then the spinach and the veggie cheese to top it all off.
Poke holes down into the lasagna to allow the sauce to seep down into the bottom layers.
Next, cover with foil and place in a 425-degree oven for 75 minutes until the sauce is bubbling on the edges of the pan and the cheese has melted.
Let cool and then slice and serve. I find it works best to pop the whole thing in the frig and serve it the next day when all the flavors have really intensified.
