When the New Year came in I promised myself to eat healthy. Well, I didn’t keep that promise and I ate everything that wasn’t good for me, like potato chips (my weakness), cheese puffs, fried foods, pops, and cake. What it boils down to I’m addicted to food. I thought I could go cold turkey and just stop eating what I love. But what I found out was NOT SO!!!

I heard and read about so many people going cold turkey and how successful they were at it. Well, I have much respect for them because this isn’t something to take lightly. Going cold turkey is not for me. I see I will have to go slow. I also watched this program called “I Use to be Fat” and one of the trainer’s said something that stuck in my head. He told his client “SICKNESS TASTE GOOD.” That is no lie….this is when I said to myself you better get yourself together and get it right.

So, I’m starting this new life style in April. I have always wanted to make my own sauerkraut so I just purchased a fermentation pot online today. I’m waiting with anticipation for it to come. I am looking forward to making some sauerkraut. This will be my first time fermenting anything. I need to purchase some half gallon mason jars now. I have to get a little at a time because of money. I’m on a budget. It’s better to slow then not at all. Money was another excuse I used not to get started. But you know what I realized I pay out money to go to the doctor while on a budget why not put it where it’s going to be better used.

Anyway, I purchased a 10 liter fermentation pot. I will be able to make quite a bit of kraut. I like sauerkraut brought from the store but it is in a can, not raw, it is heated and pasteurized and has lost most vitami
C content and enzymes. I hear homemade is much better than what you buy in the stores. Also, I read that fermentation food is good for you.

Benefits of eating raw fermented foods:
1. Fermented food improves digestion.
2. Fermented foods restore the proper balance of bacteria in your stomach.
3. Fermented foods that are raw are rich in enzymes.
4. Fermenting food increases the vitamin content.
5. Eating fermented foods helps absorb nutrients we eat.
6. Fermented food preserves longer.
7. Fermenting is inexpensive.
8. The flavor of food taste better when fermented.

When my equipment arrives I will let you know, but not until I make my sauerkraut first. That way I can kill two birds with one stone. I will let you know how it turned out and how I like the fermentation pot.

Right now I’m so excited about this but who knows things can change for the worse. I’m praying that that won’t be the case. Well, I better go and read what I need to do and what else I need to purchase for my fermenting adventure.
