Anyone looking to sell BBQ style foods at their local fair or annual festival will need a good selection of BBQ recipes.

If you are already an experienced BBQ chef you are probably always on the lookout for new and interesting ideas for recipes. As you know, this is the way to attract the public. Here are a few ideas for some different BBQ recipes.

Give an Eastern flavor to chicken burgers by preparing them with lemongrass and lime.

Make your chicken burgers in the usual way with minced chicken, finely grated onion, breadcrumbs, and garlic if wished.

Add to the mix finely chopped lemongrass (the white part), chopped coriander, some grated lime zest, a little fish sauce and a small amount of sugar. Make these into burger shapes as normal and before cooking, brush them with a light type of oil such as rapeseed.

Serve them in buns as usual with chili sauce or mayo, for a truly different taste. Try out this recipe or any new BBQ recipes at home to get the ingredient amounts just right.

Try a Caribbean twist on pork belly for a recipe full of tropical flavors.

First you need to make a marinade using a roughly cut onion, a couple of cloves of garlic, a scotch bonnet chili, half a dozen roughly chopped spring onions, a little ground allspice, a 1.5fl oz of orange juice, a few sprigs of thyme and 1.5 inches coarsely grated ginger. Blend all the ingredients to make a marinade.

This marinade will do for about 2 pieces of pork belly of around 3lb each, so if you are cooking in amounts you will need to adjust accordingly.

Score the skin and fat of the pork, place in the marinade and drizzle with 1.5fl oz of soy sauce. Leave for 2 hours or preferably overnight. The pork can then be precooked for 3 hours on a low heat to save time later – on the BBQ it will only have to be cooked for a few minutes each side.

The jerk sauce is made using 3fl oz tomato ketchup, a little ground allspice, and 1.5fl oz. orange juice, a little honey, a little red wine vinegar and 2 inches ginger, peeled and grated.

These are all blended until smooth and the sauce should be brushed on the meat before cooking with a bunch of thyme. The sauce will caramelize and color on the BBQ. Serve with rice.

Instead of the usual beef, chicken or pork BBQ recipes why not try lamb for a change. Here is a good recipe with an Indian flavor that will do for about 1lb of shoulder or leg of lamb.

The meat should be off the bone and the fat removed. The meat should be cut into 1-inch chunks, mix together 5fl oz natural yogurt, a little coriander, a few pinches of ground cumin, a pinch of black pepper and the juice of half a lemon.

Leave the meat in this marinade for an hour. Then put the meat onto skewers to make kebabs. Grill for about 8 – 10 minutes, basting with the marinade.
