You sometimes remember nostalgically how you and your younger brother would wait for your mother to cook the braised chicken for your Sunday brunch at least once a month. You wanted your kids to taste this delicious braised chicken dish but the recipe got lost. After surfing the net for many days, you found a recipe which was quite similar to the one that your mother prepared. This coming Sunday, as your kids would be at home, you hope to surprise them with your favorite braised chicken recipe. rnHow is the braised chicken prepared?rnThe braised chicken recipe that you would be preparing for your family takes around 45 minutes to cook. The key ingredients needed to cook the braised chicken are: White chicken - 1 ( cut into equal 8 pieces ) rnOlive oil - ¼ cuprnOnion (thinly chopped) - 3rnMushrooms - 6 (quartered and cleaned) rnFresh lemon juice - ¼ cup rnThinly sliced cloves of garlic - 3rnOrange peel of around two inches wide rnCinnamon stick of an inch rnCloves - 2 rnAll-spice pods - 10 rnCardamom - 1 pod rnBay leaf - 1 rnWater - 1 ½ cup to make the chicken broth rnNutmeg powder - ½ tsp rnSalt and pepper, to taste rnHere is how you cook the braised chicken In a large pot heat the olive oil to a medium temperature. Now add the chicken pieces and cook them until a good golden color is achieved. Now remove the golden-colored fried chicken to a plate. rnKeep around two tbs of olive oil in the large pot.rnNow in the same large pot where the chicken has been fried to a golden-brown color, add the finely chopped onions and mushrooms. Fry both the onion and the mushrooms till they are soft and then add the garlic. Fry them for another few minutes.rnIn a cheese cloth, wrap all the spices (orange peel, cloves, cinnamon, bay leaf, all-spice pods) carefully. Now place the spice bundle in the pot.rnNow add the golden-colored chicken pieces (important element of your braised chicken) back into the large pot with the juices.rnNow add the 1 ½ cup of water to create the chicken broth and season with salt and pepper, to taste. rnOver a medium heat, bring the chicken broth to a boil.rnOnce the chicken broth is boiling, lower the heat.rnCover the large pot and let it simmer over low heat for around 30 to 45 minutes.rnAdd the nutmeg powder and more seasoning of salt and pepper if needed.rnOnce cooked you can serve braised chicken to your family for a Sunday brunch.
