Heat a medium skillet over high heat. Add tomatoes and cook, until charred on all sides, for 10 minutes. Let it cool slightly. 2. Cut the tomatoes in half crosswise; squeeze to discard seeds. Remove cores and chop the remaining pulp and skin. rn3. Cut chicken into 1-inch chunks; sprinkle with salt and pepper. Add 1 teaspoon oil to the pan and heat over high heat. Add the chicken and cook, stirring occasionally, until it is browned, 3 to 5 minutes. Transfer to a plate. 4. Reduce the heat to medium and add the remaining 1 teaspoon oil. Add onion and cook, stirring, until softened, about 2 minutes. Add garlic and jalapeño and cook, stirring, until fragrant, about 30 seconds. Add lime juice, the chicken and tomatoes. Cook, stirring, until heated through, 1 to 2 minutes. Stir in cilantro and scallions. Divide the chicken mixture among tortillas. Serve with lime wedges. Chicken Khada Masala • 2 whole chickens (each cut in 8 pcs) • 4 Tbsp gheern• 3-4 medium-sized onionsrn• 1 kg yogurtrn• 200 g fresh creamrn• 2 Tbsp green chilli pastern• 1 Tbsp white pepper powderrn• Salt to tastern• 2 Tbsp ginger, choppedrn• 1 Tbsp garlic, choppedrn• 1 tsp green cardamomrn• 4 bay leavesrn• 3 cinnamon sticksrn• 1 Tbsp mace • 1 tsp fennel seeds • 1 Tbsp cumin seedsrn• 6-7 whole red chillies, • 1 kg basmati rice Method 1. Wash the chicken.rn2. Put ghee in a pot and saute onions.rn3. Add yogurt, green chilli paste and white pepper powder and salt.rn4. Cook for 10 minutes. Cool and blend it in a blender.rn5. pour ghee in a pan add ginger, garlic and saute chicken.rn6. Add the paste and cook.rn7. Now put the whole spices, except cumin and red chilli.rn8. Cook for 10 minutes and finally gives a tadka or tempering of cumin seeds and whole red chillies.rn9. Serve with boiled rice. The craze for easy chicken recipes will never fade away.
