Are you on a weight loss diet plan? Dieting doesn’t have to mean boring, bland food. Try out these delicious lip smacking low fat casserole recipes to treat yourself, without piling on the calories. Bean and Apple Casserole Ingredients 1.Butter beans, soaked: 1 cup 2.Brown sugar: ½ tablespoon 3.Firm apples, peeled, cored and quartered: 2 4.Cinnamon: ½ teaspoon 5.Red wine vinegar: 1 tablespoon 6.Salt: to taste Preparation Preheat the oven to 180oC. Cook the butter beans in unsalted water for about one and a half hours till it turns tender. Drain the beans and reserve the liquid. Stir in the sugar, apples, cinnamon, salt and vinegar with the beans. Transfer the mix into an oven proof dish. Now pour in some of the reserved liquid over it. Cover the dish with a foil or lid and bake for around 35 to 40 minutes. Baked Apple and Carrot Recipe Ingredients 1.Apples, peeled, cored and sliced: 6 2.Cooked carrots, sliced: 2 cups 3.Brown sugar: 1/3 cup 4.Flour: 2 tablespoon 5.Orange juice: ¾ cup 6.Salt: to taste Preparation Place half of the apples in a non stick two-quart baking dish. Now cover it with half of the carrot slices. Mix in the flour, brown sugar and the salt, and sprinkle half of this mixture over the sliced carrots. Repeat these layers and pour orange juice over the top. Bake it at 350o for about 45 minutes. Chili Macaroni Casserole Ingredients 1.Small elbow macaroni : ½ package 2.Chili beans: 1 can 3.Del Monte chili ready tomatoes: 1 can 4.Fat free cheddar cheese:1 pack Preparation Cook the macaroni, drain it and set aside. Cook the tomatoes and beans in a large pot. Now stir in the macaroni and add about half of the fat free cheese. Keep stirring till the cheese melts. Pour this into a baking dish and top it of with the remaining cheese. Refrigerate it. Heat it at 350oC for about 20 minutes when you are ready to eat.
