Can’t seem to get enough of chicken but have to stick to a diet that makes you chew on salads? Don’t give up hope. You can stay with your weight loss program and still have some really scrumptious chicken. Try out these amazing, flavorful low fat chicken recipes which you will just love sinking your teeth into without worrying about any additional calories. Oven Fried Low Fat Chicken: Ingredients 1.Chicken breasts: 1 ¼ pounds 2.Crushed cornflakes: 2 cups 3.Egg whites: 2 4.Paprika: 2 teaspoon 5.Mixed herbs, dried: 2 teaspoon Preparation Preheat the oven to 425o. Cut the chicken breasts into four pieces. Take a shallow bowl and place the egg whites in it. Take another shallow bowl and place the mixed herbs, paprika and the crushed cornflake crumbs in it. Dip the chicken into the egg whites. Now dip it again in the shallow bowl containing the cornflake crumbs and mixed herbs. Coat a baking tray with non stick cooking spray and place the dipped chicken on it. Cook the chicken for around 20 to 25 minutes. Remember to turn the chicken when you are halfway through. This preparation serves four. Low Fat Apricot Chicken: Ingredients 1.Chicken breasts, skinless, boneless: 45 ounces 2.Flour: 1/3 cup 3.Canola oil: 2 teaspoon 4.Apricot preserves: ½ cup 5.Chicken broth, fat free, low sodium: ½ cup 6.Tamari sauce or reduced sodium soy: 1 tablespoon Preparation Take a plate and sprinkle some flour on it. Dredge the chicken pieces in the flour. Take a large skillet and heat some oil over medium heat. Cook the chicken till it turns brown, giving about three to four minutes to each side. Now reduce the heat down to low. Mix the chicken broth, the soy sauce and apricot preserves in a small bowl. Add this to the skillet. Cover it and simmer till the chicken is cooked through (i.e. for around 15 minutes). Remove the chicken now, and cover it loosely with a foil to keep it warm. Then turn up the heat and cook the sauce until it thickens and is a bit reduced, for about one to two minutes. Serve the chicken with the pan sauce. This preparation will serve four.
