“Luscious Mango Upside Down Cake”
“Low Glycemic Index, Gluten-Free, Sugar-Free, and Fat-Free”
Here is a super delicious cake that’s sure to please young and old alike. People love mangos and this cake is full of the goodness of mangos. And this cake is totally fat-free, sugar-free, gluten-free, and has a super low glycemic index. That being said, this cake doesn’t hold back on flavor. Personally, I like this cake cold because it’s super moist and it’s almost like eating pudding… and this cake is amazingly easy to make. A Whole-Foods Plant-Based Recipe.
Ingredients:
2 - Cups of Organic Oatmeal Flour - I usually just make my own oatmeal flour with whole flattened oats that I place in my powerful blender to make flour.
1 - Cup of Organic Mesquite Powder - This sweetener has a super low glycemic index of 28 and a lovely brown sugar like flavor.
2 - Large Ripe Organic Bananas
1 - Teaspoon of Organic Baking Powder
1 - Teaspoon of Organic Vanilla Extract
2 - Teaspoons of Organic White Vinegar
1/2 - Teaspoon of Himalayan Salt
1 1/2 - Cups of Filtered Water
1 - 9x9x3 inch Pyrex or Metal Pan
4 - Cups of Organic Mango Meat - Cut open the mangos and remove the flesh.
Take the mangos meat and place it in a 9x9x3 pan. Next, take all the rest of the ingredients and blend them together until smooth and pour the batter over the mangos. spread out the batter and pop the pan into a 375-Degree oven for 40 minutes or until the top of the cake becomes nice and brown… and you start to see the mangos bubbling at the bottom of the pan.
Remove from the oven, let cool and serve… or let cool and place in the frig for a wonderful cold treat (That’s the way I love this cake)

Health Benefits of Organic Mesquite Powder
The mesquite tree grows slowly and needs very little water… they have pods that are edible that can be made into lots of healthy food products.
Sweet Powder – Mesquite Pods are roasted and ground into a fine powder that is sweet and a great substitute for sugar.

Low Glycemic Index – Mesquite powder has a low glycemic index because it contains soluble fiber that slows down absorption. Instead of taking 2 hours to absorb like regular sugar… it slows down to 4 to 6 hours thus preventing sugar spikes.
Diabetics – Mesquite powder is great for diabetics because it does not create blood sugar spikes. It contains a special form of fructose that does not require insulin. It’s interesting to note that ever since some of the Native American Tribes have switched to regular sugar and not eating mesquite powder… diabetes has increased.
Anti-Fungal – Mesquite powder also has some anti-fungal compounds that help to prevent and rid the body of fungal infections.
Migraines – Mesquite powder may also prevent headaches and migraines.
Roots, Bark, and Leaves – Mesquite bark and the roots make a nice tea that helps with diarrhea. Also if you boil mesquite roots it creates a gelatinous balm material that helps with wound healing and colic. Mesquite leaves can be made into eye drops for sore itchy eyes.
Omega 3 Fatty Acids – Mesquite powder contains fatty acids – omega 3 oils that help with cardiovascular health, strokes, and cancer.
