For families and friends dinner is the most significant meal of the day. It is the meal you are sharing and enjoying together. Sharing not only the meal, but the proceedings of the day. Sharing the events that went well, as well as those that didn’t. Making a diabetic dinner that everybody at the dinner table wants to eat does not need to be a trial. If you follow some easy guidelines then you are most of the way there. A diabetic dinner does not need to have anything other than the ingredients that are easily obtainable at your local store. There is no need to purchase any expensive or unusual components. It is not necessary to prepare a different dinner for the diabetic at your dinner table. In fact if everybody at the table eats using the guidelines for a healthy diabetic dinner then everyone is moving towards greater health. You don’t have to be a diabetic to eat a better meal. The central rule for a diabetic dinner is also the strategy for a healthful meal. rnIn simple terms a diabetic dinner should be:  high in fiberrn low in fat, sugar and saltrn half full of vegetables There may be some detailed needs for the diabetic at your table, taking into account what is vital to balance their individual blood sugars that day. But in following these simple rules you are most of the way there. Here are two fast, flavoursome meals that everybody in the whole group will enjoy. They are both dinners that are so simple nearly anyone in the family can arrange them. They are appropriate for all ages and are high in fiber, low in fat, sugar and salt and are half full of vegetables. rnEasy Peasy Tortillas Take a tortilla (the better quality and more wholemeal the better) and line it with lettuce and sliced tomato. Heat a can of kidney beans and some salsa and some on top of the lettuce and tomato. Finally top with low-fat cheese and roll up. Serve with a salad (including as many different colored vegetables as you can) and brown rice. Effortless Chilli Beans Brown 400g lean ground mince and pour off any excess fat. Grate or chop 1 cup each of chopped or grated onion, celery, carrot, capsicum. Add these vegetables and 1 and 1/2 can of low salt canned tomatoes, 1 can kidney beans, 1 T Mexican chilli powder (or have fun experimenting with some different spices), 1 t of mixed herbs to the pot and simmer until flavour has developed. Serve with some steamed broccoli and brown rice on the side.
