“Organic Curried Garlic Eggplant with Peppers”
Here is a delightful dish that can be served over brown rice to create a wonderful meal. Full of the great health benefits of organic turmeric and garlic, and the powerful healing abilities of organic eggplant. This recipe only takes minutes and it’s hearty, delicious, and will warm the soul of anyone who loves eggplant.
Ingredients:
10 - Medium Organic Eggplant Sliced into Long Strips
2 - Large Organic Red Bell Peppers Sliced into Long Strips
16 - Cloves of Organic Garlic Minced
2 - Tablespoons of Organic Olive Oil
1 1/2 - Tablespoons of Curry Powder
2 - Teaspoons of Chili Powder
3 - Cups of Mustard Greens Chopped, or any other kind of greens that you like such as Kale, Collard Greens, or Turnip Greens
4 - Cups of Low Sodium Organic Veggie Stock
Sweetener - Adding a little sweetness to this pungent dish makes it very tasty. Adding a dash of stevia or a little honey works well… slowly add and check depending upon your taste.
Salt and Pepper to Taste
Add the oil to a large frying pan and heat the pan on medium heat, and then add the onions and garlic and sauté until golden brown. Then add the eggplant strips and while constantly stirring allow it to cook down part way. Then add the curry powder, chili powder, and the red bell pepper strips. Now add the veggie stock and keep stirring and cook until all the eggplant is nice and soft. Next allow the whole pan cool a bit and add the chopped greens and salt and pepper and the stevia or honey. We don’t want to destroy all the goodness of the greens with too much heat. Mix well and serve over brown or white rice.
This recipe makes about 10 medium servings, and it will keep in the frig for a full week.

Eggplant has little to no fats and it’s very low in carbs. But remember if you add lots of egg, oil, cheese and other fatting things to eggplant it’s no longer a low calorie food.
