"Organic Double Banana Cake"
“A Very Low Fat and Low Glycemic Index Cake”
This wonderful cake is totally vegan, super low fat, and has a very low glycemic index and it’s super tasty. Plus this cake is quick and easy to make. We just pop it into our little electric toaster oven at home (that we we don’t have to heat up the house using the big oven) and in 35 minutes it’s ready to serve. And this cake has all the powerful goodness of taro root flour which is very healthy.
Ingredients:
1 1/2 - Cups of Organic Taro Root Flour - Taro root flour has a glycemic index of around 20 which is very low, thus making it great for weight loss and diabetics. Organic taro root flour can be found on Amazon, Ebay, and other places on-line and at some health food stores near you.
1/2 - Cup of Organic Yellow Corn Meal
1/2 - Cup of Organic Buckwheat or Gram Flour - Both high protein flours or some other low glycemic index flour can be used.
2 - Cups of Organic Nut Milk
1 - Tablespoon of Organic Vanilla Extract
2 - Teaspoons of Organic White Vinegar
2 - Teaspoons of Organic Ground Cinnamon
3 - Cups of Extremely Ripe Organic Bananas - The blacker the bananas the more flavorful they are for making a cake. So don't throw out those terrible looking black bananas save them for making a cake. I have seen chefs use black bananas even when they are nothing but liquid inside… but make sure they are not spoiled.
2 - Teaspoons of Organic Baking Powder
1 - Large Ripe Organic Plantain - Cut into Thick Slices - Ripe plantains when cooked taste just like bananas.
2 1/2 - Cups of Organic Sweet Apple Cider
Mix to all the ingredients together except the plantain slices and apple cider. Then pour the batter into a 9x9 inch baking pan and top with slices of ripe plantain. Push the slices of ripe plantain down into the batter but make sure not to cover them completely. And then dust the top of the cake with a little more cinnamon. Bake in a 375 degree oven for 35 minutes or until a toothpick comes out clean and the top turns golden brown.
Remove the cake from the oven and poke the cake all over with a sharp knife and pour on the apple cider and allow the cider to thoroughly soak in.
Next allow the cake to cool completely… then slice and serve.
Serves about 10 people
I feel this moist cake is best when it comes out of the frig— Yummy!
Health Benefits of Organic Taro Roots

Taro root also helps with skin rashes, nausea, and regulate cholesterol. Taro roots builds strong bones and supports thyroid function and can be mashed, boiled, fried, made into chips, and used in casseroles, soups, stews, used as flour for baking and so much more. And taro roots are really creamy and tasty. I really love taro root and that’s why I grow lots of taro root in our wonderful organic garden.
Remember to Eat Organic - Organic is the best way to go because regular fruits and veggies contain up to 6 cancer causing chemicals, 12 hormone disrupting chemicals, and 10 other disease causing chemicals—Not Good. Eat Organic and Stay Healthy.
