“Organic Gluten Free Banana Pineapple Tart”
Here is a great dessert recipe that’s simple to make plus delicious and healthy. It only takes minutes to make and will delight the whole family. This dessert is full of the great healing goodness of pineapple, bananas, and apricots. This wonderful recipe is sure to put a smile on everyones face at the end of a great meal or for one of those little snacks during the day.
Ingredients:
Crust
2 - Cups of Organic Gluten Free Baking Mix
1 - Teaspoon of Organic Ground Cinnamon
2 - Tablespoons of Organic Oil of Choice - Could Light Olive Oil, Canola, or Some Other Oil.
1/2 - Teaspoon of Organic Stevia - or some other sweetener could be used instead
1 - Teaspoon of Organic Vanilla Extract
1 3/4 - Cup of Filtered Water
A little bit of spray oil for coating the baking dish
Topping
3 - Large Mostly Ripe Organic Bananas Sliced (Allow the slices to sit in a little lemon juice for a minute or so to keep from them turning brown)
2 - Cups of Organic Pineapple Chunks
1 - Cup of Organic Sugar Free Apricot Jam
A little bit of Organic Ground Cinnamon to Sprinkle on Top
Take all the crust ingredients and mix them into a somewhat thick batter. Then spread into a 12 inch cast iron skillet or some other baking dish which has been sprayed with a little bit of organic oil to keep things from sticking. Then pop the pan into a preheated 400 degree oven for 20 minutes or until the crust is slightly brown. Then remove from the oven and let cool.
Now cut up the bananas and the pineapple and heat the apricot jam until it’s nice and easy to spread. Lay out the bananas and pineapple on the crust and then pour on the apricot jam or spread with a large spoon. Then pop the whole thing back in the oven for 15 minutes until the topping starts to bubble. Then remove from the oven and let cool completely and sprinkle with a little cinnamon on top, then slice and serve, makes about 6 to 8 servings.
