“Organic Plantain Pasta with Carrots and Kale”
“A Whole Foods Plant Based Recipe That’s Sure to Please”
Here is a wonderful organic and vegan recipe that’s great tasting and everyone will love it. Plus this dish is hearty enough for a winter meal and it’s full of energy and good nutrition. And this recipe is very quick and simple to make— and people will come back for seconds.
Ingredients:
4 - Large Organic Plantains - Made into Spaghetti Strips - Cut the ends off the plantain, make two cuts on either side through the peel and peel off the skin. Then use a peeler that makes long spaghetti like strips and make the whole plantain into strips. Plantains can be found at regular supermarkets in this day and age or at Asian and Latin Markets.
2 - Large Organic Carrots - Made into Spaghetti Strips
2 - Cups of Organic Kale - Chopped
3 - Organic Veggie Salt Free Bouillon Cubes
10 - Cloves of Organic Garlic - Minced
Salt and Pepper to Taste
Enough Filtered Water to Cover all the Plantain Strips plus a little more.
(Optional) - You can also add Organic Marinara Sauce or Pesto Sauce on Top for more flavor.
Take the plantain strips and place them in a large pot and add water with the bouillon cubes, garlic, and boil until the plantain strips are thoroughly cooked. This usually takes about 15 to 20 minutes. Then strain and cook the strips and add salt and pepper to taste and let cool.
Mix the plantain strips with the carrot strips and kale and arrange on a plate.
Remember, for added flavor marinara sauce or pesto sauce can be poured over this pasta.
