“Organic Sweet Cornbread Berry Cake”
“A Gluten Free Dessert”
Here is a great tasting dessert that’s very filling and satisfying that even the pickiest sweet tooth's will love this dessert. Full of the goodness of fresh berries and the long lasting energy of cornbread this dessert is really quick to make and will be a crowd pleaser. And this dish also makes a healthy breakfast cake for those who want to grab something and get on the road. And this gluten free cake is great for all those who have gluten intolerance or celiac disease.
Ingredients:
2 - Cups of Organic Cornmeal
1 - Cup of Organic Gluten Free Pizza Mix or All Purpose Gluten Free Flour
2 - Teaspoons Organic Baking Powder
3/4 - Cup of Organic Apple Sauce or Mashed Organic Banana Could Be Used.
4 - Tablespoons of Organic Agave Nectar or Honey
2 - Cups of Organic Nut Milk of Any Kind
2 - Teaspoons of Organic White Vinegar
1/2 - Teaspoon of Salt
1/2 - Teaspoon of Ground Organic Cinnamon
3 - Cups of Organic Mixed Berries - Fresh or Frozen
Mix together everything except the berries and pour into a 10 inch springform pan.
Then add the berries on top in the middle and then place in a preheated 350 degree oven for 35 minutes or until the top becomes nicely brown and the toothpick comes out clean in the middle of the cornbread part of the cake. Remove from the oven and let cool and then remove from the springform pan.
Then slice and serve— makes about 12 servings.
And drizzling on a little extra agave nectar or honey on top of the cake also works well for that little added sweetness.

Corn does contain fat, but most of that fat is unsaturated good fats which are important for great health. And a 3.5 oz serving of cornmeal contains about 10 grams of protein which is really great. Cornmeal also contains lots of great zinc for boosting up our immune system, calcium and phosphorus for strong bones, magnesium for enzyme production, and potassium for healthy heart contractions and water regulation. Plus iron which is very important for the production of hemoglobin and preventing anemia.
Cornmeal contains lots of great fiber, fiber for preventing colon cancer, cardiovascular disease, strokes, and cancer. And corn is a very good substitute for wheat for those who have celiac disease or gluten intolerance. And corn also contains lots of powerful antioxidants such as coumaric acid, caffeic acid, anthocyanins, ferulic acid, vanillic acid, syringic acid, and protocatechuic acid… all of which help to prevent and repair DNA damage and thus help to prevent disease. And corn contains lutein and zeaxanthin which are important for eye health and for preventing macular degeneration. And eating normal amounts of corn (Up to 1 or 2 cups a day) helps to stabilize blood sugar which is very important for type 1 and type 2 diabetics.
