“Organic Sweet Potato Lasagna”

“Gluten Free and Low Glycemic Index”
Here is a great tasting lasagna recipe that’s to die for. And this lasagna is really quick and simple to make. This sweet potato lasagna is sure to please everyone even the meat eaters. And this lasagna is full of the great nutrition of organic sweet potatoes and lots of organic sun dried tomatoes. And this recipe is gluten free for all those who are gluten intolerant or have celiac disease. Plus it has a low glycemic index making it wonderful for diabetics.

Ingredients:

4 - Cups of Organic Sun Dried Tomatoes - Cut into very small pieces
6 to 8 - Large Slices of Raw Organic Sweet Potato - 3/8 thick or less - I happen to leave the skin on because lots of vitamins and minerals are in the skin, but the skin can be removed.
4 - Cups of Any Kind of Organic Veggie Protein Mix - This could be pea protein, tofu, or any other kind of veggie protein that a person likes
5 - Tablespoons of Organic Italian Seasoning
2 - Medium Organic Avocados Mashed
1 - Cup of Sliced Cooked Organic Mushrooms for the Topping
3/4 - Teaspoon of Organic Xanthene Gum
1/2 - Cup or Filtered Water
16 - Oz of Organic Sugar Free Marinara Sauce
Salt and Pepper to Taste
Sliced Green Organic Onions for Garnish

Take a 9x9 inch baking pan and line the bottom of the pan with slices of organic sweet potato, some pieces might need to be cut smaller in order to line the full bottom of the pan. Then in a large mixing bowl add the protein, sun dried tomatoes, Italian seasoning, avocados, and the salt and pepper plus the xanthene gum and water. Mix well with a spoon with your hands. Now spread half that mixture over the sweet potato slices. Then add another layer of sweet potato slices, then add the rest of the protein mix. Then pour on the marinara sauce, then add the cooked mushrooms and maybe a few extra crumbles of protein mixture on top.

Cover with foil and place in a preheated 425 degree oven for 1 hour. Then remove the foil and brown the top slightly for another 10 minutes.

Remove from the oven and allow to cool and then slice.

Garnish with some organic green onions and serve.

This recipe makes about 6 regular servings or 4 large servings.

And this recipe also freezes well for later use.

Serve with a nice green salad for lunch or dinner.

“Health Benefits of Organic Sweet Potatoes”

Sweet Potatoes are full of B-6 Vitamins which is great for helping reduce inflammation and which also helps reduce arthritis, cardiovascular problems, and also strokes. Sweet Potatoes are also filled with a good amount of iron that helps our blood transport more oxygen and powers up our muscles, boosts up our immune system, and also helps with stress. And most people don’t get enough magnesium which helps us feel relaxed. And magnesium is important for the integrity of your blood vessels, heart, nerves, and our bones. And potassium is great for anyone with electrolyte problems and irregular heart beats, and we find lots of potassium in sweet potatoes. And sweet potatoes are a good source of Vitamin D, which is great for enhancing our mood and giving us a boost of energy, and building strong and vital organ systems.

Sweet potatoes are full of betacarotene which is a powerful anti-oxidant which removes free radicals and prevents and repairs DNA damage thus preventing disease. And sweet potatoes break down into glucose very slowly compared to other starches thus making them great for diabetics. Bake them, mash them, grill them, make long strings with a peeler and make sweet potato pasta, and raw they can be a tasty addition for great salads.
