Pork Meatballs and Spaghetti & Miniature Pancakes
Pork Meatballs and Spaghettir
As an all-time family favourite, meatballs make a great meal for adults and kids alike. (Bonus: Mediterranean meatballs can be portioned and frozen. Defrost thoroughly in a refrigerator prior to reheating.) This awesome dish takes about 30 minutes to prepare and will be enough to serve 3-4 people.
Ingredients:
400g pork meatballs
400g can tomato soup with basil
410g can borlotti beans, drained
1 red onion, finely diced
2 garlic cloves, finely chopped
1 tbsp. oilr
Spaghetti or tagliateller
Fresh bread to serve
Method:
1. In a large frying pan, heat oil and fry onion until soft, add garlic and continue frying for 2 minutes.
2. Add the meatballs and fry until they turn brown.
3. Stir in soup and borlotti beans.
4. Gently simmer for 15 minutes.
5. Serve with spaghetti or tagliatelle.
6. Delicious served with fresh bread and a fresh green salad.
Miniature Pancakesr
This is a dish that the children WILL love. The added bonus to this recipe is that it’s very healthy as well. You can even substitute the vegetable in the pancakes with fruit bits for those warm summer days. This recipe takes about 15 minutes to prepare and cook and serves 4.
Ingredients:
125g Self-raising flour
5ml Baking powder
1 Medium-sized beaten egg
150ml Milk
145g Can processed peas, drained 165g Whole Kernel corn, drained
1 tsp. Vegetable oil
1 tbsp. Greek yoghurtrndiced cucumber
Method
1. Get a large mixing bowl and add the self-raising flour and baking powder together. Add one whisked egg and then gradually add the 150ml milk and mix to a smooth batter.
2. Gently mix in the drained Whole kernel corn and processed peas.
3. Heat a Teflon (non-stick) frying pan and add a teaspoon of vegetable oil (Not olive oil.)Use a large tablespoon and scoop a spoonful of the pancake mixture into the pan.
4. Cook each pancake for about 2 minutes on each side or until golden brown.
5. Serve with a table spoo
Greek yogurt mixed with diced cucumber – as a dip.

Hummusr
Hummus is one of the more popular Middle Eastern dips. Served with fresh or toasted pita bread, hummus makes for a great snack or appetizer. It’s extremely easy to prepare and it stores well in the fridge for about 5 days. Homemade Hummus is one of those things that could give your party that extra spark of decadence – Plus, it’s delicious and very healthy.
Ingredients:
400g can chickpeas, drained
3 tbsp. olive oil
1 clove garlicrn½ lemonr
Salt and black pepper for seasoningr
Ground paprikar
Pitta bread
Method:
1. Place the chickpeas in a food processor with the olive oil, garlic and juice of ½ a lemon and blitz for 30 seconds or until the mixture is smooth.( Alternatively, mash together with a fork.) For a more authentic hummus, try adding 1 tbsp. Tahini paste.
2. Season well with salt and black pepper.
3. Place in a serving bowl, sprinkle with ground paprika.
4. Delicious served with warm pitta bread. (I told you it was easy!)
