For a lot of us, life is a busy jumble of work, family, friends, partners, leisure, self-care, worship, charity and obligation. Sometimes, this works. More often, however, it feels overwhelming and chaotic.
Not good!
One of the most calming things you can do for yourself is to slow down and enjoy something simple, soulful and hopefully healthy. (Wow—lots of alliteration there!) I have just the thing! Blend up a big glass of Simple Watermelon Cooler, sit in the fresh air, and contemplate how wonderful your life is as you allow yourself to be nourished by watermelon’s refreshing sweetness.
Simple Watermelon Coolerr
Serves One or Twor
In the spirit of purging our life of chaos and moving toward create calm, I give you this easy, yummy, very cooling watermelon cooler. It can be made with just watermelon for delicious results. Squirt in a splash of lemon or lime (my favorite) for something a bit more complex. You can even add ice or a shot of vodka or flavored liquor. Do what you want with it. Watermelon is a low-calorie source of vitamins A and C and the super-power antioxidant lycopene, which helps your body with everything from repairing the eyes to fighting off cancer. In Traditional Chinese Medicine, watermelon is considered a cooling food, used to help lower body temperature during heavy, hot weather (like right now!).
Ingredients
3 to 4 cups of watermelon chunks (no need to remove seeds)
½ to 1 cup ice, optionalr
A squirt of lemon or lime juice, optional
1 or 2 tablespoons plain or flavored vodka, triple sec or other favorite liquor
Directions
1. Put watermelon and any optional ingredients in a blender. Whir until pureed. (You can add some water if you like a more liquidy drink.)
2. Pour into your prettiest glass and enjoy!
3. Extra cooler can be stored in the refrigerator, or poured into ice cube trays and frozen into flavored ice cubs.
