Ingredients: 1(16 ounce) package firm or extra firm tofu

Cornstarch for coating tofu
2 teaspoons sesame oil
1 onion, cut crosswise into 1/4-inch slices, then set up on its root end and quartered
1 red or green bell pepper, diced in 1/2-inch pieces
1 cup fresh or frozen snow peas1 cup sliced mushrooms
1 (8 ounce) can pineapple chunks, drained (save juice for another use)1 tablespoon fresh ginger, grated

Sauce:
1/4 cup low sodium chicken broth
1/4 cup rice vinegar
2 tablespoons sugar substitute
1 tablespoon cornstarch
2 tablespoons cup low sodium soy sauce
1 tablespoon red chili paste, or to taste

Garnish:
1/2 cup green onions, thinly sliced
1 tablespoon sesame seeds
