This sweet potato salad is like a finely directed play; the sweet potatoes are the star, but each ingredient plays an important role. The celery provides the crunch, the orange juice and honey provide the sweetness, and the dates are the character actor that makes the whole story interesting.

Let me spend just a minute on dates. This fruit of the palm tree is high in fiber, is fat-free, and has some important trace minerals. Grown in Califo
ia and other warm-weather states and countries, dates are one of the oldest cultivated fruits (from as long as 8,000 years ago). These are such a sweet fruit, that adding them to any dish makes it spectacular. In Grand Rapids you can find them at Meijer or other larger grocers in the produce section. Buy either whole, pitted dates or chopped, but whole are easy to cut up and provides a better taste and texture.

Sweet Potato Salad Recipe
Ingredients:

2 pounds sweet potatoes
2 tablespoons lemon juice
1 cup mayonnaise
2 tablespoons orange juice
2 tablespoons honeyrn½ tsp. ground gingerrn¼ tsp. saltr
Dash nutmeg
1 cup celery, chopped
1/3 cup dates, choppedrn½ cup pecans, chopped (optional)
Directions:
Peel, cut in cubes, and cook the sweet potatoes in water until tender (5 – 8 minutes) – don’t overcook.

Drain the potatoes and toss with the lemon juice in a large bowl.

In a smaller bowl, whisk together the mayonnaise, orange juice, honey, ginger, salt, and nutmeg.
Add the celery and dates to the potatoes and toss with the mayonnaise mixture. Cover and chill for an hour prior to serving.
