If you are a basic sushi eater, this is probably not for you. Most sushi restaurants serve the basic sushi rolls, the rainbows, the spicy tunas, etc... along with a few specialty rolls. Those specialty rolls are what make or break a good sushi restaurant.
There is one roll in particular out of the 26 sushi restaurants I've been to that I call the "hidden roll" because it is so simple and beats out any roll I've had before. This roll contains salmon, avocado, mango in the middle wrapped in soy paper. It is topped with thai chili sauce, wasabi mayo and finally sliced almonds sprinkled on.
If you are preparing the rice yourself, make sure to use TAMAKI GOLD SHORT GRAIN. We've tried all the others and medium grain but they just don't stick together properly. Don't forget to add the sushi vinegar and sugar accordingly, mixing that in after the sushi rice is done and fanning it to help the sugar absorb for extra stickiness and taste.
