It’s better to have raw vegetables instead of eating them cooked because raw veggies contain high quantity of heat-sensitive nutrients (vitamin A & vitamin C). These vitamins are called as heat-sensitive because when you cook vegetables at high temperatures for longer, you unintentionally destroy them. On the other hand, when you cook vegetables in water, you can also lose water-soluble vitamins like vitamin C and Folate as they easily leach into boiling water.

Another major benefit of vegetable (both raw and cooked) is that they have cancer-causing properties. Several research studies have proved that vegetables are linked with a decreased risk of cancer, particularly the raw vegetables. This is due to the fact that cooked food loses essential plant chemicals. Let’s just take an example of raw broccoli; when it’s taken in raw form, it contains about 3 times more of an enzyme known as myrosinase. This enzyme helps the body to eliminate cancer-causing substances or carcinogens. A study published in a journal named Cancer Epidemiology, Biomarkers & Prevention in the year 2008 explains, raw vegetables might curtail the risk of bladder cancer.

Raw Vegetables Helps You Lose Weight

Way back in 2009, a study published in the ‘American Journal of Clinical Nutrition’ states that when you eat more fruits and vegetables, you’re actually contributing towards weight loss. The majority of vegetables has low energy density, which means that they contain comparatively few calories/gram of food. As compared to the cooked vegetables, raw vegetables have low energy density as it contains a higher percentage of water. If you eat raw vegetables as a substitute of other foods with high energy density, such as foods high in fats and sugar; it will help you lose weight much faster.

Raw Vegetables Are Good For The Heart

Raw vegetables contain soluble fibers (pectin, gum and psyllium), which form a gel-like matrix when dissolved in water. This matrix helps to absorb cholesterol and bile acids from your body. As far as bile acids is concerned, they’re structured from cholesterol and when your body has cholesterol in the bloodstream, it tries to refill them. The water-soluble fibers present in the raw vegetables tries to eliminate the bad cholesterol from your bloodstream in order to prevent it from sticking to the walls of the blood vessels and blocking them, which might leads to the cardiovascular diseases.
