One of the best-flavoured street food in Mumbai is Vada Paav. It is the vegetarian dish Ingredients:(6 vada Paav) Vada: 2 tablespoon oilrn3 medium-sized boiled potatornred chilli powder/Kashmiri Mirchrn1/4th tablespoon of turmericrn1 tablespoon of ginger garlic pastern1 tablespoon of mustard seedsrn5 curry Patta(finely chopped)rnfresh corianderrnsalt as per tastern1 tablespoon amchur powder(dry mango powder)rn1 tablespoon Dhaniya powder 1 Paav packet(6 buns) Besan Mixture:rn200 gms besanrn1 tablespoon of oilrn1/4th tablespoon of turmericrn2 lemon juice Green chutney: Fresh coriander washed in freshwaterrn1 onionrn1 tomatorn2 green chillies(to make it spicy)-optionalrn3 pieces of garlicrn1 piece of gingerrnsalt as per tasternred chilly powder Vada Paav Chutney(Garlic coconut chutney) 1 small-sized coconut(grate it fine)rn1 teaspoon of red chilli or dried chilly(2)rn4 pieces of garlicrnpeanut(50 gms) Procedure: Vada stuffing: 1. Boil 3 medium-sized Potato in cooker.rn2. Take a Pan and add 2 tablespoons of oilrn3. Add 1 tablespoon of Mustard seed, let it cracklern4. Add 5 curry Patta finely choppedrn5. Mash 3 boiled potato and add to the panrn6. Keep your gas at slowrn7. Mix the mixturern8. Add 1 tablespoon of Dhaniya powder and 1 tablespoon of amchur powderrn9. Add 1/4 turmeric powderrn10. Add red chilli powder and salt as per tastern11. Finally, add fresh coriander to the mixturern12. Turn off the gas and allow the mixture to cool properly Besan Mixing:rn1. Take a bowl and add 200 gms of besan.rn2. add 1 tablespoon of oilrn3. add 1/4th turmeric powderrn4. add a little amount of waterrn5. Make sure you make a batter somewhat tight for making vadarn6. Finally, add lemon juice to the batterrn7. keep the batter aside for 10 minutes Vada: 1. Take a pan and add oil for fryingrn2. Take a cooled mixture of vada stuffing and make small balls (size around 1 tablespoon)rn3. Take a besan batter and dip one small ball into itrn4. Once the oil becomes hot, keep your gas on the medium flame and add small balls to the panrn5. Do not touch the balls, let it fry properlyrn6. turn on to another side if one side is brownish in colourrn7. after 10 minutes, take vada out from the panrn8. Similarly, fry all the vada Green Chutney:rn1. Take a Grinderrn2. Add fresh coriander leaves to the grinderrn3. Add 2 green chillies(optional), 1 onion chopped,1 tomato chopped, 4 garlic pieces,1 gingerrn4. Add salt and red chilly as per tastern5. Grind the mixturern6. your green chutney is ready Coconut garlic chutney: 1. Take a pan and keep the gas on low flamern2. Add grated coconut and fryrn3. Take fried coconut out from pan after few secondsrn4. In the same pan on low flame, fry 4 garlicrn, 2 dried red chillies.rn5. Take them out of the panrn6. In the same pan on low flame fry peanutsrn7. take a grinder and add fried coconut, garlic, dried chilly, and peanutsrn8. Grind the mixturern9. Your coconut garlic chutney is ready We are ready with both chutney and vada. Now take a one paav and apply green chutney and coconut garlic chutney.
