In this article I will try to show you the easy recipe for making whole grain bread at home. In order to make best in class whole grain bread a three pronged process is to be followed: 1.Preparation of Starter Doughrn2.Making a Breadrn3.Baking the Bread Preparation of Starter Dough In order to make the dough following procedure should be adopted: - Mix 2 cups of cooked whole grains with 2 cups of waterrn- Add 1/4th cup of vegetable oil maintained at room temperaturern- Add a tablespoon of yeast and follow it by adding a table spoon of iodized saltrn- A cup of whole wheat flour should be added to it The mixture should be blended in a processor in order to form a smooth mixture. Mix oil, flour and salt nicely. Enough flour should be added in right proportions so that it looks like a thick cooked cereal. The bowl should be covered with a towel or plastic wrap for 12-30 hours. Once it is fermented it can be refrigerated for a week before utilizing the mixture to make bread. Making Bread Following ingredients would be required for this stage: - 1/4 cup sweetener (such as barley malt or maple syrup) - 2 cups whole wheat flourrn- 3-4 cups unbleached white flour or whole wheat flour After the 12-24 hours, add sweetener to starter dough and stir. Add whole wheat flour, stirring it in. As you add the white flour, the mixture will be too difficult to stir. Knead it by hand in the bowl and continue to add white flour. When dough is less sticky, transfer it to a floured surface and knead 10-15 minutes or until dough is soft and springy, but not too sticky. Wash and dry mixing bowl and oil it. Place dough in bowl, cover and let rise in a warm place 1 1/2 to 2 hours. Baking the Bread Following ingredients would be required for baking the bread: - 1 teaspoon waterrn- 1 teaspoon barley malt or maple syruprn- 1 teaspoon cold-pressed vegetable oilrn- 1/4 teaspoon sea salt Mix the water, syrup, oil and salt in a bowl or cup and coat each side of the loaf with the mixture. This should be well covered and kept in oans for about an hours time. Bread should be then tested for readiness by pressing the dough. If it has a little springiness it is ready to be baked. Oven should be preheated at about 323-350 Fahernheit. Bread should be baked for about 45-60 minutes. Bread will ditactch from the pans in about 5 minutes. It should be ideally left for cooling for 30 minutes before slicing.
